ABOUT THE WINE
Sourced from Chablisâ most iconic Grand Cru vineyard, the 2021 Les Clos reflects William FĂšvreâs commitment to purity and terroir transparency. Planted on steep, southwest-facing slopes rich in Kimmeridgian limestone and fossilized marine sediments, this site delivers unmatched depth and structure. The cool, challenging 2021 vintage resulted in lower yields and remarkable concentration, with wines marked by energy, purity, and precision.
Hand-harvested from 60+-year-old vines, the grapes were gently pressed and fermented with native yeasts. About 60â70% of the wine was aged in neutral French oak barrels for 14â15 months, adding subtle textural richness without masking the wineâs mineral core. Aromas of lemon zest, green apple, crushed stone, and acacia blossom lead into a palate of great tension and length, evolving with hints of almond and subtle smoke.
Pair with classic dishes like oysters, Dover sole in beurre blanc, or creamy scallop risotto for a harmonious experience.
