2015 Domaine du Deffends "Champs de la Truffière", Coteaux Varois en Provence, France

Cepage is equally Cabernet Sauvignon and Syrah. Coteaux Varois is about as inland and continental a climate as Provence gets. It’s still hot of course, but these grapes do get the cooler nighttimes that allow for slower maturation. From a single vineyard of vines planted in the early ’70s, always hand harvested. Ecocert certified Organic. The elevage is roughly one quarter used barrels and the balance stainless tank.
